Description

We start with 100% organic wheat that we have personally sourced from small-scale farmers that we know. We then carefully prepare wheat for digestion, first, by sprouting the grain because this transforms grain into a vegetable, then, by mixing in our unique starter, a vibrant culture of fermented sprouted wheat, wild yeast and beneficial bacteria. This gives our bread its unique flavor. This process is what we rely on to make the finest, most digestible, non-reactive bread available anywhere. We do NOT use flour in our bread. Not. One. Speck. We do not add yeast (we rely on wild yeast provided by nature). We do NOT add vital wheat gluten. We rely on natural leavens to give our bread breadth and stature. We do NOT add dough enhancers nor preservatives nor modifiers. Nothing. beyond sprouted certified organic wheat, filtered water and sea salt. This is it. This is the preeminent bread available anywhere. Our base customers are diabetics and those who claim gluten sensitivity. Is there gluten in this bread? Of course. We make this bread with wheat*. But what our customers tell us that they do not have an adverse reaction to this bread or to the gluten it contains. Why? Sprouting and the process of fermentation impacts gluten development but gluten is still evident in our dough. Can you eat this bread if you are gluten intolerant? That is an individual response. We can not guarantee that you will not have an adverse reaction but if you have tried sprouted and or naturally leavened breads, you should find this bread entirely acceptable and absolutely delicious. * A recent lab analysis of our bread for gluten content shows our bread comes in at 81 parts per million.
